Am I the only one or does time seem to go by really fast as soon as the kids get home from school? They have homework to do and I have work work to do (my blog). Sometimes I help them with their school work, sometimes I have to drive them to after school activities or play dates. Just call me mom the bus driver. For my daughter, it's acting classes or musical theater. For my son, it's basketball or playing with his friends. It's all good stuff, but before I know it, it's dinner time and I don't have anything planned (again). I love coming up with amazing desserts, but making dinner, not so much. It's just not my favorite.
What I do love is any kind of dinner that's easy and even better, just 3 ingredients. These BBQ Chicken Mini Pizzas are both!
How can they be just 3 ingredients, you ask? Well, let me explain. One of the ingredients is Farm Rich Barbecue Style Boneless Chicken Bites which includes a handy dandy little packet of barbecue sauce along with the 100% real white meat chicken bites. All I needed to create this recipe was to add English muffins and cheese. Easy peazy! (You noticed the green stuff too, right? The chopped parsley is an optional garnish. But doesn't it look pretty.)

Making these BBQ Chicken Mini Pizzas is really simple. Start with one (17 ounce) package of Farm Rich Barbecue Boneless Chicken Bites. Here's what comes in the package - white meat chicken fritters and a sweet BBQ sauce packet.
Place the chicken fritters on an ungreased baking sheet and bake in a 425°F. oven for about 16 minutes.
By the way, this baking sheet belonged to my great grandmother. I love using old pans. They have so much character and it reminds me of her every time I use it.
After the chicken has cooled, chop it up into small pieces.
This recipe will make 10 mini pizzas, so you will need 5 regualr sized English muffins (split in half). Spread some BBQ sauce on each muffin half. Place some chicken on each one, then top with shredded cheese. Bake at 400°F. for 10-15 or until cheese is melted.
Serve warm.
They're great for a light dinner with the addition of a green salad, or you could serve them as an appetizer.
They look cute if you cut them into mini pieces of pizza too. That would be great for a party with extra BBQ sauce for dipping.
I also tried the Farm Rich BBQ Breaded Chicken Wings and Farm Rich Loaded Potato Skins. Both were very tasty.

BBQ Chicken Mini Pizzas
Ingredients
- 17 ounces Farm Rich BBQ Boneless Chicken Bites
- 5 English muffins split in half
- 1 ½ cups shredded mozzarella cheese
- Optional - chopped parsley for garnish and extra BBQ sauce for dipping
Instructions
- Prepare the chicken bites according to package instructions. Let cool.
- Chop chicken into small pieces.
- Spread BBQ sauce on each muffin half. Place chicken on each muffin, then top with cheese.
- Bake at 400°F. for 5-10 minutes or until cheese is melted. Serve warm.
