What you need
INGREDIENT NOTES
- Puff pastry sheets: Buy any store-bought puff pastry dough you like at your local grocery store! I use the frozen Greenwise brand from Publix that comes with 2 sheets. Thaw your dough according to the instructions. However, you will only need one puff pastry sheet.
- Apples: Purchase your favorite type of fresh apples whether it be gala apples, fuji apples, or granny smith apples. I used Honeycrisp apples. Cut your apples into thin small slices with a sharp knife. I also peeled the skin off my apples, however keeping the skin on is optional.
- Egg: All you need is one singular room-temperature egg for the egg wash. In a small bowl, whisk your egg together to make the egg wash.
- Honey: This is the main ingredient that makes these apple hand pies sweet. Use store-bought honey or local honey!
- Garnishes: To give these flaky pastries some more flavor you'll be sprinkles of ground cinnamon, powdered sugar, and then a scoop of vanilla ice cream for it to all come together. You could also add apple pie spice for more of that apple pie flavor and coarse sugar for more of a crunch.

HOW TO MAKE THESE EASY APPLE TURNOVERS
- Preheat oven to 400 degrees F. Prepare a large baking sheet and line it with parchment paper.
- On four 2 by 4 inch spots of the parchment-lined baking sheet drizzle about two tablespoons of honey (as shown in the picture).
- Place about 5-8 slices on top of the drizzled honey (depending on how big your apple slices are). Drizzle more honey on top of the apple slices then add your cinnamon.
- Using a pizza cutter, divide puff pastry sheets into 4 rectangles and lay each one on top of the honey/apple mixture. Seal the edges with a fork onto the parchment paper and gently press on the apples to make sure they stay together.
- With a pastry brush rub your pastry crust with the egg wash then bake for 18-20 minutes until golden brown.
- After baking, let cool and then flip over the flaky pastry with a spatula. Top with lots of powdered sugar and ground cinnamon. Finally on top of each turnover put a nice-sized scoop of vanilla ice cream on top!
expert TIPS
- To aim the honey in the right direction when drizzling on the prepared baking sheet, use a small spoon or right from the tube of the honey bottle.
- Using a pizza cutter to cut your puff pastry dough makes it much easier to slice.
- To make the egg wash, whisk together one egg in a bowl with a fork. Then use a pastry brush to gently brush it on.
- Use a large spatula to flip the turnovers after they thoroughly cool off.
- I highly recommend using granny smith apples or Honeycrisp apples since they are more tart and crispy. This avoids a soggy apple turnover.
- Another way to avoid soggy turnovers keep the apple pastries in the oven until they are golden brown on top.
- To make these gluten-free, you can use Schar gluten-free puff pastry dough or whatever gluten-free puff pastry you like!
- If you want to switch it up, use a pear or a peach instead!

- How do I store leftover apple turnovers? Store in an airtight container for up to a week in the fridge or for a few days at room temperature. You can also wrap each one in plastic wrap or aluminum foil.
- Can I make these gluten-free? Yes! Use whatever gluten-free puff pastry sheets you like. I recommend using Schar puff pastry dough. Follow this same recipe except let the pastry thaw for 3 hours or defrost it in the microwave for 5 minutes. Follow this recipe, but bake it for 15-20 minutes or until golden brown.
- Is it toxic to bake honey? No, heating honey takes out some nutrients but it doesn't make it toxic.
- How to keep your puff pastry flat? It depends on the puff pastry you use. I used a store-brand puff pastry, but if you were to use for example Pepperidge Farms, they puff up more. You can use any you prefer!
- Do I have to put cinnamon? No, if you are not a big fan of cinnamon there's no need to add it, it just gives extra flavor. Or instead you could add apple pie spice.
- How long do apple turnovers stay fresh? For three to four days. They will last longer in the fridge for up to a week in an airtight container.
- Can I freeze these pastries? Yes, after baking and cooling, wrap them individually in aluminum foil and freeze for up to a month. When you want to eat them, do not let them thaw, just bake them according to the instructions on the puff pastry box you used and they may need an extra few minutes in the oven until ready to eat. (May not be as crispy/fresh when frozen).
