For a batch of approximately 12 brownies, gather the following ingredients:
Eggs - Large eggs are recommended for this recipe, but feel free to use medium if that's all you have on hand. Substitute flax eggs, if desired.
Organic Coconut Sugar - Made from the coconut flower, this is a tasty sugar substitute. The flavor is a lot like brown sugar. Or use any other type of sugar that you prefer such as monk fruit sweetener.
Vanilla Extract - I actually used vanilla paste because I love its vibrant flavor, but pure vanilla extract also works well.
Coconut Oil - It's important to get the "refined" coconut oil for this recipe because the refined is very mild in flavor. If it's not refined, it will give a very strong coconut flavor to the brownies. Unless you love the coconut flavor!
Chocolate Chips - Semi-sweet chocolate chips or dark chocolate both work well here.
Protein Powder - We used Kids Chocolate Nutrition Shake Mix by NAKED - What I love about this protein powder is of course that it's great for kids and adults. Plus it contains 6 organic vegetable powders (in addition to whey powder for protein), and no artificial sweeteners, flavors or colors. It's certified gluten-free, gmo-free and soy-free. Made in the USA.
Cocoa Powder - Choose unsweetened cocoa powder for this recipe. Note: It is sometimes called cacao powder.
Salt - Himalayan pink salt is my personal favorite.
Almond Flour - Found on the flour aisle at your grocery store. It's naturally gluten free and grain free. Substitute all purpose flour if you can tolerate it and/or prefer it.
How to make High Protein Fudgy and Chocolatey Brownies
Before diving into the protein brownie batter, it’s essential to measure and prepare your ingredients accurately.
• Start by preheating your oven to 350°F (175°C). Be sure to line your pan with parchment paper for easy removal and cleanup. We used an 8"x8" glass casserole dish. Set aside.
• In a large mixing bowl, combine the protein powder with the other dry ingredients like sugar, flour, cocoa powder and salt.
• Gradually add the liquid ingredients, such as eggs, melted coconut oil and vanilla, while stirring.
• Mix the dry and wet ingredients together until smooth and blended.
• Melt a cup of chocolate chips in a microwave-safe bowl. Stir between 30 second intervals until the mixture is completely melted and well combined.
• Add the melted chocolate to your protein brownie batter, mixing well to ensure an even, chocolatey flavor.
• Pour batter into prepared pan. Sprinkle with a few more chocolate chips on top. Bake for 25-30 minutes or until a toothpick inserted in center comes out clean. Once your fudgy brownies are baked, let them cool completely before slicing. This will allow the brownies to set. Resist the temptation to dig in right away – allowing them to cool will result in a better-tasting protein brownie.
