- Chocolate Graham Crackers: These are a little tricky to find. We used a gluten free version by Simple Mills. If you can't find them, try substituting chocolate sandwich cookies or Oreo cookies as the "cracker base". Regular graham crackers work too.
- Butter and Light Brown Sugar: You can use unsalted butter or salted butter. Your choice! I've been preferring salted butter lately as it adds extra flavor!
- White Chocolate Chips: Use good quality white chocolate chips for best results.
- Crushed Peppermint Candy Canes: Place candy canes in a sealed plastic bag and crush with a rolling pin.This will give you the crushed peppermint candies for the top.
- Crushed Mint Oreos: These decadent cookies provide extra texture, a burst of mint flavor, and a touch of indulgence to the topping.
How to Make Peppermint Bark Christmas Cracker Toffee
- Preheat the Oven: Set your oven to 300°F. Line a 15” x 10” x 1” jelly roll pan with sheet of parchment paper.
- Prepare the Base: Arrange chocolate graham crackers in a single layer on the prepared pan, covering the entire surface.
- Make the Toffee: In a small saucepan, melt ½ cup (1 stick) of butter over medium heat. Add ⅓ cup of light brown sugar and ¼ t. salt and stir constantly until the mixture comes to a boil. Let it boil for 2-3 minutes (do not stir). For best results, use a candy thermometer, boil until it reaches 270°F.
- Next Step, Spread the Toffee: Carefully pour the hot toffee mixture evenly over the chocolate graham crackers, spreading it with a spatula to cover the crackers.
- Bake: Place the tray in the preheated oven and bake for 5 minutes, until the toffee bubbles. Remove from the oven.
- For the White Chocolate Layer: Immediately sprinkle 2 cups of white chocolate chips over the hot toffee. Wait 1-2 minutes for the chocolate to soften, then use a spatula to spread it into a smooth layer.
- Top with Peppermint and Oreos: Sprinkle crushed peppermint candy canes and pieces of Mint Oreos generously over the melted white chocolate. Press them lightly to ensure they stick.
- Chill: Let the toffee cool at room temperature for 30 minutes on a wire rack, then transfer the tray to the refrigerator to set completely (about 1 hour).

Ingredients
- 12 chocolate graham cracker rectangles or substitute Oreo cookies (enough to cover pan)
- ½ cup butter
- ⅓ cup packed light brown sugar
- ¼ teaspoon salt
- 2 cups white chocolate chips
- ½ cup broken up mint Oreo cookies
- ¼ cup crushed candy canes
Instructions
- Next, melt butter and brown sugar in a small saucepan. For best results, use a candy thermometer. Bring to a boil and boil for 2 to 3 minutes (270 degrees if using a candy thermometer). Then Immediately pour over crackers and spread evenly with a spatula.
- Bake 5 minutes or until the candy hardens. Remove from oven.
- Immediately sprinkle white chocolate chips over hot toffee. Let melt for a few minutes. Spread over hardened toffee. (If the white chocolate chips didn't melt enough, pop it back in the oven briefly until melted, and spread after that).
- Add crushed candy canes and broken up mint Oreo cookies. Let cool completely for at least 30 minutes. Then refrigerate for 1 hour. Cut or break into 24 squares.
- Store your Peppermint Bark Christmas Cracker Toffee in an airtight container or freezer bag to keep it fresh. It can be stored at room temperature for a few days or in the refrigerator for up to 2 weeks.
