• Preheat the oven to 325°F. Grease a mini cupcake pan. Set aside.
• Mix 1 tablespoon flax with 3 tablespoons of water to make flax egg, set aside.
• In a large mixing bowl, stir together flour, sugar, cocoa powder, baking soda, baking powder and salt. Add wet ingredients: milk, oil and vanilla. Use an electric mixer and beat on low until ingredients are just combined. Increase speed to medium and beat for 2 minutes. Add flax egg and beat for an additional 2 minutes.
