Quick and Easy Ice Cream Sandwich Cake Recipe is the easiest ice cream sandwich cake recipe around. All you need is three ingredients, a loaf pan, and some parchment paper no other added ingredients are required.
This recipe is made with ice cream sandwiches, chocolate sauce, and a cool whip in between as an airy topping. This is so delicious to serve on a hot summer day, for a special occasion, or for the 4th of July!

INGREDIENT NOTES
• Ice cream sandwiches: I used about 15 ice cream sandwiches for this recipe. I just bought two packs of the Walmart generic brand
• Cool whip: You will need one tub of cool whip, mostly thawed at room temperature. The cool whip should have soft peaks when stirring. If it is too frozen with thick stiff peaks, it will be harder to spread onto the cake
• Chocolate sauce: Use your favorite chocolate sauce, I used Ghridellai. You could also use hot fudge sauce if you prefer that!
• Sprinkles: Use any sprinkles according to the occasion! I used red, white, and blue sprinkles for the 4th of July.
• Pan: Use a loaf pan and parchment paper or plastic wrap.
HOW TO MAKE MY Quick and Easy Ice Cream Sandwich Cake Recipe
1. Line a 13 by 9-inch loaf pan with parchment paper. Prepare your ice cream sandwiches by unwrapping a few. Place two whole ones vertically at the bottom of the loaf pan in the corner vertically. Line two more whole sandwiches horizontally under the two vertical ones. Fill in the gaps with ice cream sandwiches cut in half.
2. Top that ice cream layer of vanilla ice cream sandwiches with about a â…“ cup of thawed Cool Whip and squirt on a layer of chocolate sauce.
3. Repeat these steps again. Repeat the final layer of ice cream sandwiches and put the rest of the cool whip onto the top of the cake. To make a flawless frosting look, smooth with a spatula evenly.
4. Once all cake layers are assembled, add your desired sprinkles and freeze the cake for at least 2 hours to let all of the layers of ice cream freeze.
5. After the cake is solid and frozen, cut a slice and enjoy a spoonful of your cake! The best way to serve it is by cutting right after you take it out of the freezer
QUICK TIPS
• Ensure you line your loaf pan with either parchment paper or plastic wrap so it is easy to pull out once finished
• Freeze each layer of ice cream sandwich every time you finish one to ensure everything stays in place.
• Make sure you only take out the number of ice cream sandwiches you are using at a time so the others do not melt
• Use a rubber spatula to smooth out the cool whip layers
• Since your cake will be frozen solid when you cut into it, use a hot knife to cut into it. Warm knife by running it under hot water
• To keep an even layer on layers of cake and cool whip, ensure to keep it all level and smooth to keep each layer even
• Cool whip makes the perfect ice cream cake frosting!
• Use either a rubber spatula or an offset spatula to smooth the cool whip on top.

• Can I make this gluten-free? It may be tricky to make this gluten-free. Most gluten-free ice cream sandwiches are round. However, if you find ones that have edges follow this same recipe but with different ice cream sandwiches! You may have to use more depending on the size of the sandwich
• How do I store this? You can either keep it in the loaf pan or place it in a large Tupperware. Ensure you keep it in the freezer so it stays solid.
• How can I decorate this more? Use some whipped cream frosting or traditional buttercream frosting (which is the absolute best type of frosting) to add some swirls to the top of the cake for more definition. Add festive sprinkles or more chocolate sauce on top to give it that cake look.
• Can I make this non-dairy? Sure! Use So Delicious ice cream sandwiches. They are about half the size of a regular ice cream sandwich so you will need extra to fill up the loaf pan. Then use your favorite non-dairy cool whip and chocolate sauce without dairy.
• How can I add more flavor to store-bought Cool Whip? Add a dash of vanilla extract
• What can I do to add more "spice" to this? Go crazy and use Neapolitan ice cream sandwiches! The flavors or chocolate, vanilla, and strawberry ice cream would be yummy and nostalgic!
