This cake might not look like much but it's so delicious. The unique thing about it is that it has a crust. I don't think I've ever made a cake with a crust, have you? And a fantastic crust at that. I would be happy eating just the crust. But the cake part is moist, tender and filled with fresh apples, nuts and cinnamon. Fall is the perfect time to make this dessert. Sour Cream Apple Squares was 1 of 2 winners at the 26th Pillsbury Bake-Off in 1975. Recipe on Pillsbury.com by Luella Maki of Ely, Minnesota.
In large bowl, combine flour, brown sugar and margarine; beat at low speed until crumbly. Stir in nuts. Press 2 ¾ cups crumb mixture in bottom of ungreased 13x9-inch pan.
To remaining mixture, add cinnamon, baking soda, salt, sour cream, vanilla and egg; mix well. Stir in apples. Spoon evenly over crumb mixture in pan.
Bake at 350°F. for 30 to 40 minutes or until toothpick inserted in center comes out clean. Cool 30 minutes.
Cut into squares. Serve warm or cool. If desired, serve with whipped cream or ice cream. Store in refrigerator.
I tried it both ways. Ice cream goes really well with this dessert. It would be even better with some homemade caramel sauce drizzled over it.
